Sarah Steglea and Marieke Brugman have owned and operated Howqua Dale Gourmet Retreat since 1977
Australia's first hands-on residential Cooking School, featuring the stellar talents of Australia's leading chefs, and still regarded as the most special.
An entire weekend allows you to gain insight into how leading chefs think, work, create, develop recipes. Learn their secrets, hear their stories, be inspired by their winning techniques and signature cuisines.
All you need bring is your enthusiasm for and curiosity about fine cooking and some good knives. Have fun, de-mystify wine matching and hone your skills in a convivial environment.
Classes suit anyone with a passion for cooking be they amateur, professional, in-training or a beginner.
Exciting programmes are available to a maximum of twelve participants. Chefs are industry leaders and chosen for their inspirational talent, their contribution to Australian gastronomy, their teaching skills and their generosity with information. Students arrive Friday evening in time for dinner that is always prepared by Marieke. Saturday is spent in the wonderful teaching kitchen, a " fishbowl in a garden" with stunning views out to the gardens and bush beyond. Students are engaged in every aspect of preparation for lunch and dinner which are then enjoyed with matched wines. Guest chefs join students at the table. Sunday morning is always a working breakfast to catch up on any questions, followed by an elaborate brunch preparation, that is usually food in a more informal style and suited to entertaining family, friends and a crowd.
